We are looking for a Senior Sous Chef to join the team at The Esplanade Hotel.
As a Sous Chef you will work alongside the Head Chef assisting in all aspects of the Kitchen day to day running.
Prepares meals to an excellent standard by providing food preparation expertise; promoting and providing quality food services; managing kitchen staff.
To assist the Head Chef in all aspects of the departmental running, leading the team in their absence.
Implements recipes and portion specifications by assisting in the reviewing of menus and product specifications with Head Chef; evaluating ease of menu production; implementing established procedures and techniques.
Controls food preparation by consulting with kitchen team; overseeing portion size; evaluating and improving productivity; providing food preparation personal expertise; monitoring presentations.
Improves menu quality and consistency by analysing food production records and menu expenses; standardising production recipes; promoting kitchen staff interest in quality improvement; studying, evaluating, and re-designing processes; implementing changes.
Completes all Food Safety Paperwork, including Allergens.
Maintains safe, secure, and clean work environment by establishing, following, and enforcing standards and procedures; complying with sanitation, company and local legal regulations; overseeing food preparation, safety.
At least one years’ experience as a Sous Chef.
