Hotel Chef de Partie / Station / Line Chef with good team management, organisational skills and knowledge of HACCP regulations is required for a 4 star establishment based in Stevenage, Hertfordshire. SALARY: Competitive + Benefits LOCATION: Stevenage, Hertfordshire TYPE: Full-Time, Permanent WORKING HOURS: 40 - 48 Hours per Week, working any 5 days out of 7 days JOB OVERVIEW We have a fantastic new job opportunity for a Hotel Chef de Partie with good team management, organisational skills and knowledge of HACCP regulations. As the Hotel Chef de Partie you will contribute to the restaurant service and the quality of production by managing your own ; Working as the Hotel Chef de Partie you will work autonomously to prepare dishes according to technical fact sheets whilst managing the work of the kitchen ; You will be in charge of one area of the kitchen and oversee its organisation, coordination and service. DUTIES Your duties and responsibilities as the Hotel Chef de Partie will include: Professional T echniques / Production Produce and present the dishes for the section in line with the co oking instructions and process defined by the hotel and brand Ensure that dishes are well presented, of a high standard and at the right temperature Deliver dishes in good time to suit guests' wishes R eceive deliveries, check and store merchandise when required Organise work and timing to suit fluctuations in guest numbers, special events and particular guests Team M anagement Leading a team and creating a good working atmosphere Organise and supervise the work carried out by com mis chefs and apprentices in your area Inform your team about cost optimisation and the reduction of raw material wastage; track implementation Train commis chefs, apprentices and interns to a high standard Management and A dministration Be actively involved in meeting the department's targets: by following the cooking instructions to the letter by avoiding waste and loss of food items by respecting the procedures and internal audits applicable in the hotel Help conduct inventories Helps manage stocks of equipment by avoiding breakages Hyg iene / Personal S afety / Environment Ensure that the workplace remains clean Ensure the safety of consumable goods by always respecting HACCP regulations Respect the instructions and safety guidelines for the equipment used Follow hotel security regulations (in case of fire etc) Respect the hotel's commitments to the ''Environment Charter'' (saving energy, recycling, sorting waste etc) IDEAL CANDIDATE REQUIREMENTS Pr evious Chef de Partie / Line Chef experience in a 4 star hotel/restaurant or similar environment Be fully aware of current licensing laws and the hotel/restaurant licensing policy in order that these are adhered to at all times Familiar with HACCP regulations Previous experience of managing/supervising kitchen staff HOW TO APPLY To be considered for this job vacancy, please submit your CV to our Recruitment Team who will review your details.
